Baking with paper

MUFFINS

Makes 12 large muffins
50 g margarine
2 eggs
170 g sugar
180 g plain flour
2 tsp baking powder

Melt the margarine in a saucepan. Beat the eggs and sugar until light and fluffy. Mix the flour and baking powder together. Stir the mixture into the egg batter. Slowly stir in the margarine. Spoon the mixture into the forms, filling them to about 2/3 so they don’t bubble over. Bake in the middle of the oven at 200°C for about 12 minutes. Always test the cake by pushing a skewer into the centre - if ready, the skewer will come out clean.
Tips for filling 1: 150 g chocolate, broken into pieces, and 100 g Smarties. Stir the pieces of chocolate into the mixture and sprinkle the Smarties on top.
Tips for filling 2: Add the grated rind and the juice of an orange to the mixture.

APPLEPIE

Makes 6 helpings
1 kg apples
2 tbsp sugar
1 tbsp cinnamon
100 g plain flour
100 g butter at room temperature
95 g brown sugar

Preheat the oven to 200°C. Peel, slice and core the apples. Place them into a paper case. Sift the sugar and cinnamon over the apples. Quickly mix the flour and butter together. Stir in the brown sugar using a fork. Add a few drops of water. Sprinkle the mixture on top of the apples. Bake for about 30 minutes.Suggestions for serving: Serve with thick natural yoghurt, strained and flavoured withsome orange rind and vanilla sugar.

ONION AND DILL SCONES

8 scones
4.5 dl flour
2 tablespoons sugar
1 teaspoon baking powder
1 teaspoon salt
6 tablespoons refrigerator cold butter
1 onion
2 garlic cloves
1 small bunch of dill
2 tablespoons vegetable oil2 eggs
1.5 dl cottage cheese

Heat oven to 200°C. Mix together all the dry ingredients and butter in a food mixer. Finely chop onion, garlic and dill. Fry onions and garlic in oil and add dill. Let cool. Mix an egg and an egg yolk together with cottage cheese, onion mixture and flour mixture and make a dough. Divide the dough into eight pieces and place these on a paper. Whip the rest of the egg white and brush the scones with it. Bake for about 20 minutes. Goes well together with shrimp cocktail or various fish dishes.
